Had to try it" In line with my new goal of trying a new recipe each week, I promptly collected the items needed when I did my weekly shopping. The co-worker brought me some of her left-overs to work to try. It wasn't bad. I however decided, I needed to up the ante and started looking at other similar recipes. I ended up combining ingredients from 2 I found on Pinterest. One was Martha Stewarts "quick" snack version using ramen noodes and one found on an inactive blog called Brownies for Dinner... I call my combination "Cheater Cheater Peanut Eater Pad Thai
Cheater Cheater Peanut Eater Pad Thai
4 chicken breasts, cut into bit size pieces
4 packages ramen noodles, chicken flavor
1 Tbsp vegetable oil
4 Tbsp Soy Sauce
5 Tbsp Peanut Butter
3 tsp Sriracha sauce
2 Tbsp brown Sugar
1 Tbsp lime juice
Cook chicken in vegetable oil until done, turn down to warm.
In a small mixing bowl, mix soy sauce, peanut butter,
sriracha, brown sugar & lime. Set aside.
Cook ramen according to package directions, adding
seasoning at the end of cooking. Mix
well and then drain almost all the liquid from the noodles. Add sauce to
noodles and mix well. Then add noodles
to chicken and turn to medium heath to heat thru. Top with chopped peanuts to serve.
